The single biggest error people make with beta-glucans is treating them as one supplement. The linkage geometry of the glucose backbone changes the molecule entirely. Oat and barley beta-glucan has a 1,3/1,4 structure that makes it highly viscous in solution — the basis for EFSA and FDA authorised claims that 3 g/day lowers blood cholesterol, one of very few supplement claims to clear a regulatory evidence bar. Yeast, shiitake and other fungal beta-glucans carry 1,3/1,6 branching that is recognised as a pathogen-associated pattern by Dectin-1 and complement receptor 3 on innate immune cells, priming rather than stimulating them. That immune literature is a mixture of good mechanistic work, promising trials on upper respiratory infection frequency in stressed populations such as marathon runners, and a great deal of overreach. Buying the wrong one for your goal means taking a fibre when you wanted an immune modulator, or the reverse.
