Methodology
Controlled crossover isotope study in 12 subjects measuring nonheme iron absorption from a complete self-selected diet across three 5-day periods with dietary vitamin C manipulated from 51 to 247 mg/day.
Key Findings
There was no significant difference in mean iron absorption among the three dietary periods despite mean daily vitamin C intakes ranging from 51 to 247 mg/day.
Conclusions
The facilitating effect of vitamin C on iron absorption from a complete diet is far less pronounced than that measured with single test meals.
Limitations
Small sample (n = 12), short dietary periods, isotope-based surrogate rather than iron status endpoints.
